Potato & Leek Soup      <<back>>

3 Ltrs (6 Portions) 
 
Ingredients: 
1kg Leeks
400g Medium Onions, peeled & chopped small
1kg Medium Potatoes, peeled & chopped small
100g Butter
3 Ltr Vegetable Bouillon
200ml Milk or Cream
15g Salt, to taste
15g Pepper, to taste
 
TO SERVE:
50g Chives - freshly snipped
 
Method 
1 Melt the butter in a large saucepan and add the Leeks.
2 Cover and Cook gently, stirring occasionally, for 8-10 minutes, until soft.
3 Reserve a few rings of leek for garnish.
4 Add the potatoes and onion to the saucepan with the vegetable bouillon and seasoning.
5 Bring to the boil, cover and simmer for 25-30 minutes, until the potatoes are soft.
6 Cool slightly then rub the soup through a sieve, or blend in a liquidizer until smooth.
7 Return to the saucepan and reheat, adding a little milk or cream if the soup is too thick.
8 Just before serving, Garnish with freshly chopped chives and leek rings.
