Strawberry & Passionfruit Meringue <<back>>
INGREDIENTS:
For the Meringue
3 Egg Whites
175g / 6oz Caster Sugar
1 Teaspoon Cornflour
1 Teaspoon Vinegar
1/2 Teaspoon Vanilla Essence
For the Filling
300ml/ 1/2 Pint Cream
Fresh Strawberries, sliced
Passionfruit, halve and scoop out centre
Method
For the Meringue
1 Mark a 20cm/8 inch circle on a piece of non-stick baking parchment and place on a baking tray.
2 Whisk egg whites until they stand in stiff peaks.
3 Gradually whisk in half the sugar until thick and creamy.
4 Fold in the remaining sugar with the cornflour, vinegar and vanilla essence.
5 Spoon the meringue mixture onto the lined baking tray base.
6 Bake in the centre of a preheated oven at 150C, 300F, Gas 2 for 1 Hour.
7 Leave to cool in the oven.
8 Then remove the paper and place the Meringue base on a plate.
For the Filling
9 Whip the cream. Spoon over the Meringue base.
10 Arrange the prepared fruit on top and chill before serving.
